The class will include pesto, fruit and vegetable coulis, butter sauces, and more. How to make a roux and other thickening techniques will be covered. KNIFE SKILLS - LEARNING THE BASICS

CREATIVE HOLIDAY COOKIES
Prepare a variety of holiday themed cookies for gifts, party favors, stocking stuffers, and holiday centerpieces. In this hands-on class, we’ll teach you a variety of decorating techniques, and once you’ve made the cookie dough from scratch, you’ll get plenty of hands-on practice rolling out the dough, cutting your cookies, baking them, and then decorating them in a creative fashion.

SOUPS TO IMPRESS YOUR GUESTS
Students will prepare a variety of some of our favorite’s soups using seasonal ingredients. Learn the techniques and tools used that produce rich, smooth and flavorful soups with a variety of presentations. Learn some of the classics including bisque, chowders and cream soups. MIXOLOGY
INTRODUCTION TO MIXOLOGY
This course is an introduction to the art of mixology and bartending techniques.
It is designed for those interested in a career in bartending, as well as the home entertainer. Students will learn the basic bar set up, proper glassware, measuring tools, identification of various beers, wines, and liquors, as well as recipes for mixed drinks.

HOTEL MANAGEMENT
In this continuing education course, students will be introduced to the range of hotels in operation and their management policies. The principles learned can be transferred to multiple accommodation types such as hotels, motels, resorts, bed and breakfasts, and any other business that provides accommodation or lodging. Students will gain an understanding of the complexities of hotel management and will learn to consider the multiple interrelated aspects of successful hospitality service. Online, asynchronous.
